I have worked on an option where you can set custom colors for any document in a folder or calendar entry.
I'm interested to see which people prefer:
1) Ability to choose any color combination for any folder message or calendar entry
2) A longer (but still limited) list of color combinations available in the preferences profile.
They are currently listed under the Tools action with a set and remove option that presents a simple dialog with foreground and background color picker fields.
All they do is set or remove either a $Sender1 field (matches the programmatic name of the color column in folders) on messages or $Col field (matches the programmatic name of the color column in calendar view) on calendar entries. This overrides the colors from the color profile form. If you remove your custom color, any other color from the profile returns.
